Dark Chocolate Bar
Description
Dark chocolate has long been loved for its bold, bittersweet character, and this homemade bar takes that classic pleasure back to the basics.
With just four simple ingredients, it delivers an intensely chocolatey bite that feels both indulgent and wonderfully uncomplicated.
Cacao butter gives the bar its smooth, delicate melt, while cacao powder brings a deep, rich chocolate flavor with a naturally earthy edge.
Coconut sugar softens the bitterness with a light caramel sweetness, and a little Himalayan salt brings everything into balance, making the cocoa taste even more pronounced. Cacao naturally contains antioxidants and minerals, adding a little nutritional goodness to this satisfying treat.
These chocolate bars are perfect for an afternoon sweet, a small after-dinner treat, or a homemade gift for someone who appreciates good chocolate.
I love how elegant yet easy they are—simple enough for everyday enjoyment, but special enough to share. Give this recipe a try and enjoy the pleasure of homemade chocolate from the very first bite.
Ingredients
Instructions
To Temper the Cacao Butter
-
Gather your required ingredients.
-
Cut the cacao butter into small pieces.
-
Prepare a double boiler by placing a heatproof glass bowl over a pan with gently simmering water.
-
Add the cacao butter to the bowl.
-
Melt the cacao butter slowly until it reaches 45°C/110°F, checking the temperature with a thermometer.
-
Remove the bowl from the heat.
-
Place the same bowl over another bowl filled with cold water and ice.
-
Cool the cacao butter down to 27°C/80°F, stirring gently.
-
Return the bowl briefly to the double boiler and reheat the cacao butter to 29°C.
-
Once it reaches 29°C/84°F, remove it immediately from the heat.
-
The cacao butter is now tempered and ready to be mixed with the remaining ingredients.
To Make the Chocolate
-
Add the coconut sugar to the tempered cacao butter and mix gently.
-
Add the cacao powder and whisk until smooth.
-
Add the fine Himalayan salt.
-
Mix carefully with a small whisk or silicone spatula until the chocolate becomes smooth and glossy.
-
Try not to aerate the mixture too much, so the final texture stays dense and polished.
To Mold and Set
-
Pour the chocolate into 2 chocolate bar molds.
-
Tap the molds lightly on the work surface to release any air bubbles.
-
Leave the chocolate to set at room temperature for 20–30 minutes, or until fully firm.
-
If the room is very warm, let the chocolate begin setting at room temperature first, then place it briefly in the fridge if needed to finish firming up.
-
Once fully set, remove the bars carefully from the molds.
Note
Texture & Technical Notes:
- Tempering helps improve the shine, texture, and snap of the final chocolate.
- Do not overheat the cacao butter, as this can affect the final crystal structure and make the chocolate less stable.
- Use very fine coconut sugar or powdered monk fruit for the smoothest result. If the sugar is too coarse, the texture may feel slightly grainy.
- Mix gently and avoid whipping air into the chocolate. A calm, glossy mixture will give a cleaner final bar.
- This is a foundational base recipe and can be used later for flavored or filled chocolate variations.
Storage:
- Store the chocolate bars in an airtight container in a cool, dry place.
- If the room is warm, store them in the refrigerator and allow them to sit at room temperature for a few minutes before serving.
- Best consumed within 2–3 weeks for the freshest flavor and texture.
