Instructions

To Make the Bread:

  1. Gather your required ingredients.

  1. Preheat the oven to 175°C/350°F. Line or grease a loaf pan.

  1. Grind the pumpkin seeds in a blender or food processor until finely ground.

  1. In a large bowl, combine all dry ingredients: sorghum flour, oat flour, protein powder, oat fiber, ground pumpkin seeds, ground flaxseed, psyllium husk, baking powder, salt, and pumpkin spice.

  1. Add the wet ingredients: pumpkin purée, eggs, Greek yogurt, sugar, vinegar, and water to the dry ingredients and mix until a thick, cohesive batter forms.

  1. Let the batter rest for 5 minutes to allow the psyllium and fibers to hydrate.

  1. Transfer the batter into the prepared loaf pan and smooth the top.

  1. Sprinkle whole pumpkin seeds over the surface, pressing them gently into the batter.

  1. Bake for 45–55 minutes, until the loaf is risen, set in the center, and a toothpick inserted comes out mostly clean.
