Baking is the heart of this site. With 236 recipes, it is the largest cooking method collection by a wide margin, and it covers territory that most gluten free resources only scratch the surface of. Sourdough loaves, croissants, bagels, pizza crusts, layer cakes, pie crusts, pretzels, and flatbreads are all here, each developed specifically for gluten free flours rather than adapted from wheat recipes as an afterthought.

Understanding how gluten free baking differs from conventional baking is the single most important thing you can learn. Gluten provides two things: structure and elasticity. Without it, baked goods tend toward dense, crumbly, or gummy textures. The solutions are xanthan gum or psyllium husk for binding, higher hydration doughs that stay moist longer, and often more eggs or other protein sources for structure. But the specifics vary enormously by what you are baking. Bread needs different solutions than cookies, which need different solutions than pastry.

For bread, the bread collection uses techniques borrowed from artisan wheat baking and adapted for GF flours. High hydration is critical. Where a wheat bread might use 60 to 65 percent hydration, GF bread often works best at 80 percent or higher. The dough will seem impossibly wet compared to what you expect, but it bakes into bread with better crumb and softer texture. Sourdough fermentation helps enormously because the acids break down starches and create flavor complexity that masks the sometimes flat taste of GF flours.

For cakes and cookies, the priorities shift. You want tenderness rather than chew, so oat flour and almond flour excel. Less xanthan gum than bread, sometimes none at all for cookies where you want a tender snap rather than chew. Room temperature ingredients matter more in GF baking because cold butter and eggs create pockets that GF batters cannot recover from the way wheat batters can.

Oven temperature and timing are less forgiving with GF baking. Most GF baked goods benefit from slightly lower temperatures and slightly longer baking times compared to wheat versions. This prevents the outside from setting too quickly while the inside remains gummy, which is the most common failure mode. An oven thermometer is not optional. Internal temperatures of 200 to 210 degrees Fahrenheit for bread and 195 to 200 for cakes are your most reliable doneness indicators.
