There was a period after going gluten free when every breakfast I ate was sweet. Pancakes, muffins, oatmeal, granola. It took me a while to realize I was gravitating toward sweet because all my savory breakfast habits involved bread. Toast with eggs. A bagel sandwich. A breakfast burrito in a flour tortilla. Once those were off the table, savory breakfast felt complicated.

It is not complicated at all. Eggs are the foundation of savory breakfast cooking and they are naturally gluten free in every preparation. Scrambled, fried, poached, baked, turned into a frittata or an omelet, eggs are infinitely versatile and take minutes to cook. Add vegetables, cheese, herbs, and potatoes and you have a meal that keeps you full for hours.

Shakshuka is the recipe that changed my relationship with savory breakfast. Eggs poached in a spiced tomato sauce, served with whatever you want to dip into it. Corn tortilla strips, GF toast, roasted potatoes, or just a spoon. It takes 20 minutes, uses one pan, and the flavor punches way above its simplicity. I make it at least twice a week.
