Keto and gluten free are not the same thing, and confusing them is one of the most common mistakes people make. Most gluten free flours, rice flour, tapioca starch, potato starch, are high in carbohydrates and will kick you out of ketosis immediately. Keto baking requires a completely different set of ingredients, and the overlap between "gluten free" and "keto friendly" is narrower than you might expect. This collection of 33 recipes lives squarely in that overlap.

Almond flour and coconut flour are the foundation of keto gluten free baking. Almond flour has roughly one gram of net carbs per two-tablespoon serving, which is remarkably low. It behaves more like a conventional flour than any other low-carb option, producing moist, tender results in cakes, cookies, and bread. Coconut flour absorbs vastly more liquid, three to four times more than wheat flour, so recipes require significant adjustments. The general conversion is to use one quarter to one third the amount of coconut flour compared to what a recipe calls for in regular flour, then increase eggs or binding agents proportionally.

The sourdough keto recipes are what make this collection distinctive. Fermented keto bread is unusual on most recipe sites because sourdough requires a culture that feeds on sugars, and keto baking minimizes sugars. The keto sourdough bread solves this by maintaining a GF sourdough starter and incorporating it into an almond flour base. The result has genuine sourdough tang and a better crumb than most keto breads, which tend to be dense and eggy. The keto sourdough pizza dough follows the same principle and produces a crust that actually folds without cracking.

Beyond almond and coconut flour, flaxseed meal and lupin flour are worth knowing about. Flaxseed meal has almost zero net carbs and turns into a gel when mixed with liquid, providing excellent binding. Lupin flour, made from lupin beans, has about one gram of net carbs per quarter cup and exceptionally high protein. It is less common in stores but available online and worth seeking out for bread recipes.

One crucial warning: some products marketed as keto flour actually contain wheat. King Arthur makes a "Keto Wheat Flour" that is lower in carbs than regular flour but absolutely not gluten free. Always verify both the carb count and the gluten status of any flour product, because keto labeling alone does not guarantee it is safe for people avoiding gluten.
