
Asian-Inspired Chicken and Ginger Lettuce Wraps
Description
I love lettuce wraps, mostly because they are fresh, relatively healthy, and super easy to put together.
You can add whatever stir-fried vegetables or proteins you want to fill the lettuce leaves, which makes this the perfect dish for anyone trying to clean out the fridge or use up leftovers!
This recipe features a quick peanut dipping sauce, which you can adjust if you prefer to omit the peanut butter.

For the Dipping Sauce:

Mix together the dipping sauce ingredients in a small bowl until fully mixed.

Taste, and add more soy sauce, vinegar, or honey if desired. Sprinkle some sesame seeds on top.

Set the prepared dipping sauce aside for later.
For the Lettuce Wraps:

Coat the skin-on chicken breasts in the olive oil, red pepper flakes, Kosher salt, and freshly-ground black pepper.

If you have the time, place the chicken breasts on a wire rack on a small sheet tray and allow the chicken breasts to sit in the fridge uncovered for roughly 8-12 hours, or overnight.

When you are ready to cook your chicken, add the avocado oil or sunflower seed oil to a hot sauté pan.

When the oil is hot, add the chicken breasts, skin side-down to the hot pan, and reduce the heat to medium. The chicken should sizzle when it hits the pan.

Cook the chicken breast on both sides until golden-brown and just cooked-through in the center.

Remove the chicken from the heat, and allow the breasts to rest for ten minutes before cutting them into slices for the lettuce wraps.

When you have all of the lettuce wrap ingredients prepared, fill each lettuce leaf with some of the sliced chicken from earlier, sliced scallions, julienne carrots and ginger, along with a sprinkling of sesame seeds.

Add sauce to each wrap, assuming there are no peanut allergies.

Serve warm and enjoy!
Note
For a vegan version of this tasty gluten-free recipe, simply swap out the seasoned chicken for some extra-firm tofu, or load up your lettuce wraps with an extra serving of cooked or raw veggies!
I would normally add uncooked bean sprouts (like mung bean sprouts) to these lettuce wraps, but be wary of including sprouts if serving this dish to individuals with compromised immune systems.
