This is the easiest dessert ever!  It is moist, soft, fluffy, and light.  This mug cake has the flavor of a classic pumpkin-spiced banana bread.  It can totally be eaten for breakfast!

Instructions

First, add all ingredients to a bowl. Stir until combined.

Transfer batter to a ramekin or mug.

Microwave on high for 75 to 90 seconds, depending on the strength of your microwave.

Use oven mitt to carefully remove the hot mug cake from microwave.

Top with fresh whipped cream or vanilla ice cream (if desired) and a tiny sprinkling of ground cinnamon. Enjoy!

Recipe Notes

Feel free to add chopped walnuts or pecans.  Top with a little peanut butter for the best flavor combination.
