Blackberry, Honey & Lavender Water Kefir

Special equipment: A small saucepan, plastic or wood stirring utensil; a fine mesh strainer; a glass bottle with lid for storage.

  1. For the syrup, combine the water, sugar, and lavender blossoms in a small saucepan over medium-high heat. Stir until the sugar is fully dissolved and the mixture starts to boil.

  1. Reduce the heat to low and let the mixture simmer for 5 minutes. Turn off the heat and let the contents steep for an additional 30 minutes.

  1. Allow the syrup to cool to room temperature. Pour into a clean glass jar through a mesh strainer to remove the blossoms. Set aside.

  1. Using a fork, crush the blackberries to release more of their flavor.
  1. Mix the berries, water kefir, warm honey, plus 60ml of the lavender syrup. Transfer the mixture to a glass bottle.
  1. Seal the bottle and let sit for 24 h to ferment a second time.

  1. Refrigerate until ready to drink.
  1. *Use the rest of the syrup to make more batches, cocktails, baked goods, or as a sweetener for tea.
