Description

This recipe features a warm and gooey blueberry layer and buttery shortbread topping.  It pairs perfectly with a scoop of vegan vanilla ice cream and a warm summer day.  Serve it warm or cold – either way, your friends and family will beg you for the recipe!

  1. First, preheat the oven to 400 degrees Fahrenheit. Spray a 9-inch pie plate with nonstick spray.

  2. In a mixing bowl, add all the filling ingredients. Toss until berries are completely coated.

  3. Pour this mixture down into the pie plate.

  4. Then, make the topping. Combine all topping ingredients in a bowl. The dough will be thick.

  5. Drop dollops of dough on top of the blueberry layer.

  6. Bake for 22 to 24 minutes or until the filling is bubbly and the topping is golden brown.

  7. Finally, remove from oven. Serve immediately or chill until serving.

    I love blueberry cobbler. This would work with frozen berries too! Or smaller wild Maine blueberries.
