Instructions

Preheat your oven to 350°F (175°C) and line an 8x8-inch (20cmx20cm) oven-safe baking dish with non-stick parchment paper, leaving a bit hanging over the sides and easy removal.

For the crust:

Add the flour, sugar, and salt in a mixing bowl along with the cold butter and rub the mixture with your fingers until the butter coats the flour and the mixture resembles coarse crumbs.

Firmly press the crust dough into the bottom of the baking dish, creating an even layer. Set aside.

Repeat the process for the topping. Set aside until needed.

For the filling:

Combine the blueberries, sugar, cornstarch, and Greek yogurt in a separate bowl and stir until the blueberries are coated. Evenly spread the blueberry filling over the crust, then sprinkle the crumble topping over the blueberry filling. Make sure your crumble is spread out evenly.

Bake for 40-45 minutes, until the edges turn golden brown. Remove from the oven and leave the bars to cool completely.

Once cooled, remove the bars from the pan and cut them into 12 even portions.

Serve cold.
