Preheat the oven to 325ºF.

Gently mix the almond flour, grated cheese, and baking powder together, then knead in the sourdough discard by hand or with a mixer on low speed. Start with 70 grams of the starter, and if the dough doesn’t fully come together, add in 10 more grams at a time until you have a cohesive mass.

Divide dough into 2 pieces, wrap each in plastic wrap, and refrigerate for at least 1 hour and up to 2 days to firm up the dough.

Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.

Roll out the dough, one piece at a time, between two pieces of parchment paper to prevent sticking. Roll to about ⅛ of an inch, then remove the top layer of parchment and cut into 2” x 1” rectangles.

Place crackers on the lined baking sheet, poke the tops lightly with a fork, and bake for about 20 to 25 minutes, rotating the baking sheet halfway. The crackers are done when they are golden brown.

Let cool and enjoy. These crackers will store for up to about a week.
