Description

This chia seed pudding with roasted figs is absolutely delicious, and could help reduce high blood pressure!

For an even sweeter version, add some ripe banana into the chia seed and dairy-free milk mixture before you allow the pudding to sit in the fridge overnight.

  1. For the chia seed pudding, combine the chia seeds, ground cinnamon, and almond milk.

  1. Divide the contents into serving glasses, and allow the chia seed pudding to chill and set in the fridge overnight.

  1. The following morning, when you are getting ready to eat breakfast, preheat your oven to 400˚F.

  1. When the oven is hot, place the whole fresh figs on a parchment-lined sheet tray and roast in the oven for about four minutes.

  1. Remove the figs from the oven, and slice in half.

  1. Place the roasted halved figs on top of the chia seed pudding, and garnish with some fresh mint leaves and a drizzle of honey.
