Feel free to add extra chocolate, nuts, dried fruits, or seeds as desired!

Instructions

  1. Preheat oven to 375°F. Line a cookie sheet with parchment paper.

  2. Add softened vegan butter, maple syrup and sugar to a mixing bowl. Use an electric hand mixer to mix the contents together.

  3. Add in the vanilla extract and applesauce. Stir to combine.

  4. Add in the remaining ingredients. Stir together.

  5. Chill the dough for 60 minutes in the fridge.

  6. Scoop out balls of dough. Roll into 1-inch balls. Place 2 inches apart on a lined cookie pan. Gently press down on each ball of dough to create a cookie shape.

  7. Bake for 10-12 minutes, or until golden-brown in color and set in the middle.

Note

Enjoy warm, or store in a tight lock container for up to 3 days.
