This rich and gooey chocolate fondant is the ultimate dessert for any chocolate lover. With a soft, cake-like exterior and a molten chocolate core, it’s elegant enough for a dinner party yet simple enough for a cozy night in.

Coconut sugar adds a subtle caramel note, while fresh berries and ground almonds bring brightness and texture. Even today, that first cut—when the warm chocolate gently spills out—still feels like a delicious little moment of magic.

  1. Assemble the required ingredients.

  1. Grease 4 ramekins or fondant molds and dust lightly with cocoa powder.

  1. In a saucepan or over a double boiler, gently melt the chocolate and butter together.

  1. Stir until smooth. Set aside to cool slightly.

  1. In a separate bowl, whisk the eggs and coconut sugar until light and slightly frothy.

  1. Slowly pour the melted chocolate mixture into the egg mixture while whisking constantly.

  1. Sift in the sorghum flour and gently fold it into the batter until fully combined.

  1. Divide the batter evenly between the prepared molds.

  1. Place the molds in the freezer for at least 4 hours or preferably overnight for best results.

  1. When ready to bake, place the frozen fondants on a tray and bake at 200°C for 18 - 20 minutes until the edges are set but the center remains soft.

  1. Let rest for 1–2 minutes, then carefully unmold onto plates.

  1. Serve immediately with fresh berries, a sprinkle of ground almonds for crunch, and a few mint leaves for freshness.

  1. Cut gently into the cake to break its soft shell and let the warm, melted chocolate pour out, creating a rich, glossy pool ready to enjoy!
