Description

Moist, rich, decadent, and intensely chocolaty muffins--They are the best little dessert for birthdays and special occasions!

Instructions

  1. First, preheat the oven to 350 degrees Fahrenheit. Line a muffin pan with paper liners.
  2. In a mixing bowl, add gluten-free flour, cocoa powder, baking powder, and baking soda. Stir to combine.
  3. Then, add in all remaining ingredients. Stir until no clumps remain.
  4. Pour batter into the muffin liners. Fill each about ¾ of the way full.
  5. Bake for 16 to 18 minutes or until a toothpick inserted comes out with only moist crumbs.
  6. Finally, remove from oven. Allow cupcakes to fully cool before removing them from the pan and adding frosting.

Note

For an extra intense chocolate flavor, add a pinch of espresso powder.  It really brings out the chocolate flavor!

    I LOVE the apple sauce in the ingredients here. In healthy baking recipes, I’ve seen some folks swap out the oil in selected with a 1:1 replacement for apple sauce…it works really well!
