Instructions

First, line an 8-inch by 8-inch pan with parchment paper.

In a small bowl, combine melted coconut oil, coconut sugar, and salt. Stir until combined.

Add in gluten-free oats, vanilla, and pecans. Stir to combine.

Add the remaining ingredients, and stir until smooth.

Pour the mixture into the parchment-lined pan, and press down to ensure the contents form an even layer and stick together.

Place the contents in the fridge for roughly four hours to harden.

After the bars have hardened in the fridge, cut into slices and serve.

Recipe Notes

Use refined coconut oil for a neutral flavor; unrefined has a slight coconut taste.  Feel free to replace pecans with walnuts or cashews, or use gluten-free muesli instead of old-fashioned oats. 

Store the finished bars in the fridge or freezer.
