Whisk together oat flour, cacao powder, baking soda, baking powder, coconut sugar, and salt in a bowl.

Add your ground flaxseed to a large bowl and pour the water into the bowl. Mix to combine.

In a separate bowl, add dairy-free milk and apple cider vinegar. Allow the ingredients to sit for 5 minutes.

Add the dairy-free and flaxseed mixtures into your dried ingredients. Combine well with a spatula until no streaks remain.

Mix in chocolate chips, if using chocolate chips.

Heat a frying pan over medium-high heat, and grease with coconut or olive oil.

When the pan is hot, pour in about 1/3 cup of batter. Cook for 2 minutes and then flip. Cook for a further 30 seconds until brown. Remove to a plate, and repeat the process using the rest of the mixture.

Serve with desired toppings.

I love how these pancakes came out! The cocoa powder is such a fun addition. It's a little harder to judge when the pancakes are "fully-cooked", as the batter is darker in color than traditional pancake batter, but you figure it out pretty quick.
