Description

Only a few ingredients are needed.  They come out tasting like little balls of chocolate-covered brownie batter.  Decadent, rich, and indulgent, but made with good-for-you ingredients.

  1. First, line a large-rimmed baking pan with parchment paper.
  2. Add pitted dates, cocoa powder, and melted coconut oil to a food processor. Process until it becomes a paste-like substance.
  3. Use your hands or a spoon to roll this mixture into 1-inch balls. Place on a lined baking pan. Freeze for 10 minutes.
  4. After 10 minutes, make the chocolate coating. Combine melted chocolate and melted coconut oil in a bowl.
  5. Dip the balls into the coating one by one.
  6. Place back on the lined pan. Continue for all truffles.
  7. Place pan in the freezer for 15 minutes or until the mixture has hardened.
