Prepare the crispy oyster mushrooms:

Pull the oyster mushrooms apart into thin strings. Heat a pan with a drizzle of olive oil, then fry the mushrooms. Let them grill for 2 minutes on each side, stirring occasionally. Repeat this process 3-5 times until they are golden brown and crispy. Add a splash of tamari at the end to enhance their flavor, allowing it to cook off slightly.
Assemble the sandwich:

Slice the ciabatta roll in half. Spread mustard on the base, then layer on the sliced tomatoes, bell pepper, avocado, arugula, hummus, and sun-dried tomatoes. Drizzle with a bit of balsamic vinegar cream for extra flavor.
