Gluten-Free Ciabatta Roll Sandwich with Hummus, Sundried Tomatoes, and Fresh Vegetables

Prepare the crispy oyster mushrooms:

  1. Pull the oyster mushrooms apart into thin strings. Heat a pan with a drizzle of olive oil, then fry the mushrooms. Let them grill for 2 minutes on each side, stirring occasionally. Repeat this process 3-5 times until they are golden brown and crispy. Add a splash of tamari at the end to enhance their flavor, allowing it to cook off slightly.

Assemble the sandwich:

  1. Slice the ciabatta roll in half. Spread mustard on the base, then layer on the sliced tomatoes, bell pepper, avocado, arugula, hummus, and sun-dried tomatoes. Drizzle with a bit of balsamic vinegar cream for extra flavor.

Finish and enjoy:

  1. Place the other half of the ciabatta on top, press gently, and cut the sandwich in half. Serve immediately and enjoy this juicy, flavorful gluten-free lunch!
