Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a microwave-safe bowl, gently melt the coconut oil and agave syrup together in the microwave, stirring until fully combined. You can also use a small sauce pan on the stove if you prefer.
Add the eggs, desiccated coconut, lime zest, and a pinch of salt to the melted mixture, and stir until well combined.
Roll the mixture into small balls (about one Tablespoon each) and flatten slightly into cookie shapes.
Roll each cookie in extra desiccated coconut for a light coating.
Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
