
Coconut Water Kefir
Description
Making water kefir using coconut water is a fantastic idea for more than one reason. Not only does it taste delicious, but it also combines the probiotic properties of water kefir with the electrolytes and vitamins of coconut water.

Special equipment: A glass jar; towel, butter muslin or paper towels to use as a covering; a rubber band or jar ring to secure the covering; plastic or wood stirring utensil; a fine mesh strainer; a glass bottle with lid for storage.

Place the water kefir grains in the coconut water. Cover the jar with a tight-weave towel or coffee filter and secure with a rubber band.

Culture for about 48 hours or until the coconut water becomes slightly cloudy and fizzy.

Once the culturing process is complete, strain the liquid into glass bottles. Reserve the grains for another batch.

Add lemon juice and seal the bottle.

Allow the coconut water kefir to ferment a second time, for around 24 hours.

Store in the refrigerator.
