
Sweet Corn Pico de Gallo
Description
A traditional pico de gallo would include tomato, onion, jalapeno or serrano peppers, cilantro, and freshly-squeezed lime juice.
To make a unique and herb-laden version of this amazing dish, add cooked corn to your pico, along with a mixture of added fresh mint, chives, and parsley, or really whatever fresh herbs you have available.

Steam or grill the corn, and then remove the kernels from the cob.

Place the cooked corn kernels in a bowl with the diced red onion, minced jalapeno, and zest and juice of one lime, and allow the contents to sit for five minutes while you prepare the tomatoes.

Dice the tomatoes and sprinkle with Kosher salt.

Combine the diced tomatoes with the corn, onion, jalapeno, lime, and fresh herbs.

Taste, and add more salt or lime juice, if desired.
