Sesame Seed Crackers

Description

Don't feel nervous if the dough seems dry--it's different than working with cookie dough batter or bread dough, with less hydration.

  1. Combine all of the dry ingredients in a large mixing bowl.

  2. Make a well in the center of the dry ingredients, pour the wet Ingredients: into the well, and mix together until it begins to come together. Knead until smooth on a lightly floured counter.

  3. Using a rolling pin, roll out the dough between two pieces of parchment paper - this will help the dough not to stick to the surface, and will help you to achieve an even layer.

  4. Using a sharp knife, cut out rectangular shapes and place them on a parchment-lined baking sheet, making sure to leave space between the crackers. Brush with olive oil and sprinkle with sesame seeds.

  5. Bake in a preheated oven at 200°C/390°F for 14 minutes.

Note

Allow to cool down completely before eating and enjoy with dips.

    I’ve never used chickpea flour to make crackers. The comment about the dough often feeling “dry” is spot-on! You need the dough to be less hydrated so that the crackers come out nice and crispy after they bake in the oven and cool down.
