Description

You can make this dip with creamy cashews, tangy lemon juice, fresh garlic, and flavorful herbs. It's easy to prepare and perfect for dipping, making it a crowd-pleaser at any party or meal.

Things to note: To make this recipe non-vegan, substitute the blended cashews, hot water, and almond milk with full-cream Greek yogurt.

Special equipment: high-speed blender.

Instructions

  1. Add the raw cashews and hot water to a heat-proof container and leave them to soak for at least 30 minutes.
  2. Drain and add them to a blender jug with the almond milk, lemon juice, onion, garlic, salt, and pepper and blend on high until smooth and creamy.
  3. Add the herbs and stir until completely mixed.
  4. Taste and adjust the seasoning if necessary.
  5. Transfer the dip to a serving bowl and refrigerate for 1 hour.
  6. Stir the dip before serving.
  7. Serve with your choice of fresh vegetables or pita bread.

    Delicious flavour. My dip turned out runny like a salad dressing, but I will return to this recipe for a fettuccini alfredo sauce. ( I used 2 garlic cloves instead of the powder. )
