Instructions

Add the raw cashews and hot water to a heat-proof container and leave them to soak for at least 30 minutes.

Drain and add them to a blender jug with the almond milk, lemon juice, onion, garlic, salt, and pepper and blend on high until smooth and creamy.

Add the herbs and stir until completely mixed.

Taste and adjust the seasoning if necessary.

@Rachel: That sounds like a delicious way to repurpose the dip! ๐Ÿ˜Š The fresh garlic likely added more moisture than the garlic powder, which could have contributed to the thinner consistency. Next time, you might try reducing the liquid slightly or adding an extra handful of cashews to thicken it up. Using it as a fettuccine Alfredo sauce is a fantastic idea, creamy and flavorful! Delicious flavour. My dip turned out runny like a salad dressing, but I will return to this recipe for a fettuccini alfredo sauce. ( I used 2 garlic cloves instead of the powder. )
