Date, Coconut, and Almond Truffle Snowmen
Made with wholesome ingredients like dates, coconut, and almond flour, these tiny snowmen are naturally sweetened, and bursting with flavor. The combination of a snowy coconut coating and rich dark chocolate makes them as delightful to look at as they are to eat!
Instructions
7 stepsMix the Ingredients
In a mixing bowl, combine the ground dates, coconut milk, almond flour, desiccated coconut, tahini, and orange zest.

Mix until a sticky dough forms and all the ingredients are fully incorporated.

Shape the Truffles
Roll the mixture into balls, creating two sizes for each snowman: one smaller (for the head) and one larger (for the body).

Stack one small ball on top of a larger ball, pressing them together gently to adhere. Insert a stick or wooden skewer through the center to secure them together.

Coat the Snowmen
Lightly brush the assembled snowmen with melted coconut oil and roll them in desiccated coconut for a snowy finish.

Alternatively, dip the "bodies" in melted dark chocolate for a fun variation, leaving the "heads" snowy white.
Decorate (Optional)
Use melted dark chocolate to add small dots for the eyes and buttons, and a dash of orange zest for a "scarf."
