Description

I’ve always loved how this simple mix of mashed bananas, dairy-free milk, and chia seeds creates a sweet and healthy breakfast, with minimal required effort.

This fall-spiced version includes extra ground cinnamon, some maple syrup, along with cinnamon sticks and whole star anise as garnish. The whole spices are primarily added here because they look so beautiful!

  1. For the chia seed pudding, combine the chia seeds, ground cinnamon, and two of the mashed bananas, along with the almond milk or dairy-free milk. Mix well.

  1. Divide the contents into serving glasses, and allow the chia seed pudding to chill and set in the fridge overnight.

  1. The following morning, cut the remaining ripe banana into thin slices.

  1. Top each chia seed pudding serving with some maple syrup, sliced bananas, whole star anise, a cinnamon stick, and a sprinkle of ground cinnamon.
