It’s easy to make and perfect to add flavor to pasta dishes, salads, or sandwiches.

Instructions

  1. Using a food processor, pulse basil leaves, toasted nuts, garlic, salt, and pepper together until finely chopped.
  2. Stir in the sauerkraut brine.
  3. Transfer the mixture to a jar and weigh it down with a fermentation weight - or simply add more brine if necessary to keep the pesto submerged.
  4. Leave the contents to ferment on the counter for a quick 24 to 48 hours.

  5. Before storing in the fridge, discard any extra brine, and then mix in the olive oil and parmesan cheese, if using.
