Soak the cashews overnight and drain them. Add the cashews, soy yogurt, nutritional yeast, lemon juice, coconut oil, and salt to a blender or food processor container. Blend for 3 minutes or until you have obtained a homogeneous, smooth consistency.

Add the probiotic powder (empty the contents of the probiotic capsule) to the blended mixture, and blend for one minute to ensure it is well-mixed.

Transfer the contents to a clean bowl or container, covered with cheesecloth or a clean towel, and let it culture for 12 -18 hours at room temperature (it will ferment faster at higher temperatures).

Refrigerate for at least 1 hour before serving. You can store it in the refrigerator in an airtight container for up to 1-2 weeks.

Really fun cream cheese recipe here. The probiotic capsules can be a tiny bit pricey, but each pill seems to make an entire recipe, so they will last you for a while!
