Gather your required ingredients.

Heat a large cast iron skillet over the coals or on the stove over medium heat.

Add the olive oil, onions, garlic, peppers, and sweet potato.

Sauté the vegetables for ten minutes, then cover with the lid and let it cook for another ten minutes. Ensure that the sweet potatoes are tender before adding the kale, as cooking times may vary depending on the size of the sweet potato cubes.
Once the sweet potatoes are soft, add the kale, salt, and pepper, and sauté for five minutes, or until the kale is wilted.

Make four indentations in the hash, and crack one whole egg into each indentation. Cook the eggs for about five minutes, or until they are cooking to your liking.

Top the dish with avocado and fresh basil, and enjoy on its own or with some toasted gluten-free bread!
Note
If you prefer you can use regular potatoes instead of sweet potato.
If you want to make this vegan, replace the eggs with ½ cup of beans, or some tofu for added protein.
I love the smokiness added by cooking this over the fire. But if you are cooking this over the stove, add ½ tsp of smoked paprika to impart a smoky flavor.
