French Baguette

Description

Dust the loaves with flour before baking to give them the rustic look of a classic French baguette.

  1. In a large bowl add the flour, guar gum, tapioca starch, sugar, and yeast, and stir to combine.

  2. Create a space in the center of the dry ingredients, add the remaining ingredients and mix to combine.

  3. The dough will clump together around the spoon. Turn it out onto a floured surface and knead a few times using floured hands until smooth and soft.

  4. Transfer to an oiled bowl and cover with a tea towel. Allow the dough to rise for 30 minutes.

  5. Divide into two equal parts and shape into long baguettes. Place loaves on a lined baking tray or oiled baguette pan.

  6. Preheat the oven to 480ºF/250ºC. Allow dough to rise again for a further 30 minutes or until one and a half times the original size.

  7. Bake for 15-20 minutes depending on the thickness of the loaves. They will look crusty and golden.

  8. Wrap in tea towels as they cool for a softer loaf. Enjoy while still slightly warm!
