Fresh Cucumber Salad with Toasted Sesame Seeds and Mustard Vinaigrette

I love fresh cucumbers, and they are usually pretty easy to find at the supermarket year-round. This recipe is slightly Asian-inspired, with the use of some Tamari, toasted black sesame seeds, and some sesame seed oil.

Description

You can make this however you want, using whatever spices and fresh herbs sound good to you. I used fresh lime juice, but you could easily use rice wine vinegar, Chinese black vinegar, or whatever acidic ingredient you think would work well here!

  1. Combine the diced cucumber in a bowl with the Kosher salt, and allow the contents to sit for about ten minutes.

  1. After ten minutes, discard the excess water that has drained from the cucumbers.

  1. In a small bowl, combine the diced red onion with the lime zest, lime juice, sesame seed oil, Tamari, yellow mustard, toasted black sesame seeds, toasted fennel seeds, fresh chives, crushed red pepper flakes, and a few grinds of fresh black pepper.

  1. Taste, and add more Tamari if desired.

  1. Mix the contents with the drained cucumbers from earlier, and serve cold.

Note

This salad will release some liquid from the vegetables if prepared in advance of the meal. Simply drain some of the excess liquid when you are ready to serve.
