Description

They are especially delicious when dipped into a glass of milk or served with a cup of coffee.  For the ultimate dessert, serve these cookies with a scoop of vanilla ice cream!

  1. First, preheat the oven to 375 degrees Fahrenheit. Line a baking pan with parchment paper.

  2. In the bowl of a stand mixer (or by hand), add coconut oil and coconut sugar. Beat to combine.

  3. Then, add in egg (or flax egg), molasses, and vanilla. Stir to combine.

  4. Add in all remaining ingredients. Stir to combine.

  5. Use a cookie scoop to drop dough balls onto a lined pan. Space at least 2 inches apart.

  6. Bake for 11 to 14 minutes, or until cookies look set in the center.

  7. Finally, remove from oven. Cool on pan for 10 minutes before eating.

Note

These cookies will come out soft and gooey.  Do not be tempted to bake them too long.
