These Gluten-Free Apricot Almond Rolls blend the sweet, tangy taste of apricot jam with crunchy almonds and warming cinnamon, all wrapped in a delicate gluten-free dough.

Step 1: Prepare the Dough

  1. Gather your required ingredients.

  1. Whisk together the sorghum flour, potato starch, tapioca starch, and salt in a large bowl.

  1. Quickly knead in the very cold cubed butter and mascarpone until a smooth dough forms.

  1. Wrap the dough and chill for at least 30 minutes.

Step 2: Prepare the Filling

  1. Mix the coconut sugar and cinnamon in a bowl.

  1. Chop the almonds and set them aside.

Step 3: Roll Out & Fill

  1. Divide the dough into 2 equal portions. Roll each portion into a 20x20 cm (8x8 inch) square.

  1. Spread each square evenly with some apricot jam, sprinkle half of the chopped almonds, and dust with half of the cinnamon-sugar mixture.

Step 4: Roll & Chill

  1. Roll each square tightly into a log.

  1. Freeze logs for 30 minutes to 1 hour for easier slicing.

Step 5: Slice & Bake

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.

  1. Cut each log into slices about 2.5 cm (1 inch) thick. Arrange slices cut-side down on the prepared baking sheet.

  1. If desired, you can brush the tops lightly with beaten egg for a golden color.

Step 6: Bake & Serve

  1. Bake for 15–20 minutes, until the rolls are golden-brown and fragrant.

  1. Cool on a wire rack before serving.

➥ Freeze in sealed bags for up to 2 months.
