Instructions
Step 1: Prepare the Dough
-
Gather your required ingredients.
-
Whisk together the sorghum flour, potato starch, tapioca starch, and salt in a large bowl.
-
Quickly knead in the very cold cubed butter and mascarpone until a smooth dough forms.
-
Wrap the dough and chill for at least 30 minutes.
Step 2: Prepare the Filling
-
Mix the coconut sugar and cinnamon in a bowl.
-
Chop the almonds and set them aside.
Step 3: Roll Out & Fill
-
Divide the dough into 2 equal portions. Roll each portion into a 20x20 cm (8x8 inch) square.
-
Spread each square evenly with some apricot jam, sprinkle half of the chopped almonds, and dust with half of the cinnamon-sugar mixture.
Step 4: Roll & Chill
-
Roll each square tightly into a log.
-
Freeze logs for 30 minutes to 1 hour for easier slicing.
Step 5: Slice & Bake
-
Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
-
Cut each log into slices about 2.5 cm (1 inch) thick. Arrange slices cut-side down on the prepared baking sheet.
-
If desired, you can brush the tops lightly with beaten egg for a golden color.
Step 6: Bake & Serve
-
Bake for 15–20 minutes, until the rolls are golden-brown and fragrant.
-
Cool on a wire rack before serving.
