
Gluten-Free Cauliflower Rice Pilaf
Description
Cauliflower rice has gained popularity over the past twenty years, and works wonderfully as a gluten-free and healthy dinner option or side dish.
You can break down the cauliflower using a food processor, box grater, or simply with a sharp knife and large cutting board!
I’ve kept the recipe below very simple, utilizing some frozen vegetables to save on prep time, although it would be wonderful with loads of added fresh herbs, spices, and whatever fresh vegetables you can imagine!

Grate the whole cauliflower using a box grater (or pulse using a food processor) until you arrive at very small “rice-like” pieces of cauliflower.

Heat the olive oil in a large sauté pan over medium heat.

When the oil is hot, add the carrots and minced white onion and cook for roughly six minutes while stirring.

Add the grated cauliflower rice, and cook while stirring for roughly five additional minutes.

Add the minced garlic, garlic powder, sweet corn, and green peas, and stir to combine.

Cook the cauliflower rice for an additional five minutes, and then season with Kosher salt.

Taste, and add another pinch of Kosher salt or splash of olive oil if desired.

Divide the cauliflower rice among plates and serve.
Note
Frozen vegetables are often fresher than the “fresh” vegetables you see in your supermarkets, as they are often frozen right when they are harvested. That being said, I love fresh vegetables probably a bit more than their frozen counterparts.
