Step 1: Prepare the Dough

  1. Gather your required ingredients.

  1. In a saucepan, heat water, butter, agave syrup, and salt over medium heat until the butter melts.

  1. Reduce heat and add brown rice flour and potato starch, stirring constantly until the dough forms a ball and pulls away from the pan.

  1. Transfer the dough to a bowl and let it cool for 5 minutes.

Add Eggs & Vanilla

  1. Using a hand mixer or stand mixer, beat the dough while adding eggs one at a time, mixing until fully incorporated.

  1. Add vanilla extract and continue mixing until smooth. The dough should be thick and pipeable.

Fry the Churros

  1. Heat oil in a deep pan to 180°C (350°F).

  1. Transfer the dough into a piping bag fitted with a star tip.

  1. Carefully pipe strips of the dough into the hot oil, cutting with scissors. Fry in batches until golden brown and crispy (about 3-4 minutes per side).

  1. Remove and drain on paper towels.

Dust & Serve

  1. Mix cinnamon and dry powdered coconut milk in a bowl.

  1. Roll warm churros in the dusting mix or sprinkle over the top.

  1. Serve immediately with your favorite dipping sauce (chocolate, caramel, or fruit compote).
