Gather your required ingredients.
In a bowl, combine the milk, water, and coconut sugar.
Add the psyllium husk and whisk immediately.
Let it sit for 5–10 minutes, until a thick gel forms.
To Make the Dough
In a large bowl, combine the potato starch, gluten-free flour blend, oat flour, dry yeast, and salt.
Make a well in the center of the dry ingredients.
Add the psyllium gel, egg, egg yolks, and olive oil.
Mix and knead until the dough becomes smooth, silky, and elastic for a gluten-free dough.
Cover the dough while preparing the shaping area.
To Shape
Lightly grease the work surface with olive oil.
Divide the dough into 8–9 equal portions.
Keep the remaining dough covered while shaping each bun so it does not dry out.
Roll each portion into a ball.
Flatten slightly, then roll out in a circle.
Roll into a long log shape with the help of your fingers.
Shape into hot dog buns, making them longer or shorter depending on your preference.
Place each bun on a lined baking tray, leaving space between them.
To Ferment
Cover the buns and let them ferment at room temperature for 2.5–3 hours, or until visibly puffed and almost doubled.
For overnight fermentation, place the shaped buns in the refrigerator, covered, and bake the next day.
To Bake
Preheat the oven to 200°C / 390°F.
Spray some water on the buns.
Brush the buns with beaten egg.
In the oven add some steam when the buns go in.
Put the buns in the oven and immediately reduce the temperature to 180°C / 360°F.
Bake for 25–30 minutes, until golden and cooked through.
Let the buns cool before slicing.
