In a large bowl or the bowl of a stand mixer, combine flour mix, sugar, baking powder, salt, dry yeast, and optional milk powder.
Mash the potatoes very well until smooth and creamy, with no lumps remaining.
Add the mashed potatoes, eggs, softened butter, and psyllium gel.
Mix until the dough is soft and cohesive. It should be elastic but slightly sticky.

Cover the bowl and let the dough rise in a warm place for 1.5 hours, or until visibly puffed.
