Special equipment: A plastic or wood stirring utensil; a glass bottle with lid for storage.

  1. Mix water kefir and grapefruit juice.
  1. Transfer to a quart-sized jar with lid or glass bottle.

  1. Seal the bottle and leave in a warm place for 24 hours for the second ferment.
  1. Taste to check if you’re happy with flavor and carbonation level. Refrigerate until well chilled.

    Super simple recipe–really easy to make this. Grapefruit is one of my favorite fresh fruit juices to add to water kefir for the second ferment. It gets all nice and fizzy, without being too sweet! I generally serve this over ice in the summer, especially when it’s really hot outside!
