  1. In a heat-proof metal or glass bowl, add the dark chocolate and coconut oil. Place the bowl over a saucepan of simmering water, but make sure the bottom of the bowl does not touch the water. Stir the chocolate until completely melted and smooth.

  2. Mix coconut yogurt, nut butter, maple syrup, and vanilla extract in another bowl. Whisk everything until it is well combined.
  3. Slowly pour the melted chocolate into the yogurt mixture, whisking continuously until fully incorporated and smooth.
  4. Divide the mousse mixture between serving ramekins, cover with cling film, and refrigerate for 2 hours or until fully set.

  5. Once the mousse is set, remove it from the refrigerator. Garnish with a dollop of coconut cream, a sprinkle of nuts, and grated chocolate.

  6. Serve chilled.
