
Gluten-Free Healthy Gummies with Mango, Raspberry, and Coconut

Instructions
Prepare the Mango Gummies

Soak 5 gelatin sheets in cold water for 5-10 minutes to soften.

In a small pot, combine the mango puree, water, and lemon juice. Gently heat over low heat, stirring occasionally, until warm (do not let it boil).

Squeeze out the excess water from the gelatin sheets, and stir them into the warm mango mixture until fully dissolved.

Pour the mixture into silicone molds, cups, or any mold of your choice. Place in the fridge to set while you prepare the other flavors.
Prepare the Raspberry Gummies

Soak 5 gelatin sheets in cold water for 5-10 minutes to soften.

In a small pot, combine the raspberry puree, water, and agave syrup. Gently heat over low heat, stirring occasionally, until warm.

Squeeze out the excess water from the gelatin sheets and stir them into the warm raspberry mixture until dissolved.

Pour the raspberry mixture into molds or cups, either mixing it with the mango gummies or using separate molds. Refrigerate to set.
Prepare the Coconut Gummies

Soak the remaining 5 gelatin sheets in cold water for 5-10 minutes to soften.

In a small pot, heat the coconut milk and agave syrup over low heat until warm.

Squeeze out the excess water from the gelatin sheets and stir them into the warm coconut milk until fully dissolved.

Pour the coconut mixture into molds or cups, again either mixing or using separate molds. Place in the fridge to set for at least 1 hour.

Serve when ready, or enjoy at your leisure.
Note
You can use any type of mold or container for this recipe—silicone molds for fun shapes, small cups for individual servings, or even a shallow dish to cut into squares once set. You will note that the gummies are slightly firmer if you allow them to set in the fridge for a longer period of time.
