Gluten-Free Healthy Raspberry Marshmallow Zephyr Coated in Chocolate

Description

Made with fresh raspberry puree and naturally sweetened with agave syrup, these marshmallows are as nutritious as they are delicious.

The agar-agar provides the structure without using traditional gelatin, making them a great plant-based alternative. You can enjoy them as is, or take them to the next level by coating them in a rich, dark chocolate glaze.

Instructions

Prepare the Raspberry Mixture

  1. Blend the raspberry puree with water and agave syrup until smooth.

  1. Pour the mixture into a pan and add the agar-agar. Stir well and begin to heat over low heat.

  1. Bring the mixture to a boil, constantly stirring, and cook for approximately 15-20 minutes until the mixture thickens. Keep stirring the mixture to avoid burning.

Whip the Egg White

  1. While the raspberry mixture is cooking, whip the egg white with a pinch of salt and lemon juice in a separate bowl until soft peaks form.

  1. Once the raspberry mixture has boiled for 15-20 minutes, carefully pour the hot mixture into the whipped egg white, all while continuing to whisk on medium speed. It’s helpful to have an electric mixer here with a whisk attachment.

  1. Continue whipping until the mixture becomes thick and holds its shape. This is your Zephyr mixture.

Pipe the Zephyr

  1. Transfer the zephyr mixture into a piping bag fitted with a round or star tip.

  1. Pipe the marshmallow shapes onto a baking sheet lined with parchment paper.

  1. Let the zephyr sit in a dry room (not in the fridge) overnight to set.

Optional Chocolate Coating

  1. Once the marshmallows have set, melt the dark chocolate with the vegetable oil in a heatproof bowl over a pot of simmering water, stirring until smooth.

  1. If desired, stick two marshmallow halves together and dip them in the melted chocolate using a bamboo stick for easy handling.

  1. Allow the chocolate coating to harden before serving.

Note

You can enjoy the raspberry marshmallow zephyr on its own after it sets, or take it a step further by adding the chocolate glaze. Store the zephyr in an airtight container at room temperature.
