Line a 20 × 20 cm metal frame or square tin with baking paper.
To Make the Nougat Layer
Gather the necessary ingredients.
In a bowl, combine the oat flour, inulin if using, psyllium husk and crystal salt.
To the dry ingredients add oat milk, peanut butter, honey.
Mix until a thick, soft nougat-like dough forms.
Fold in the toasted peanuts.
Press the mixture evenly into the prepared frame.
Place in the refrigerator while preparing the caramel.
To Make the Caramel Layer
Place the dates and golden flaxseed in a bowl.
Pour the boiling water over them.
Let soak for 15–20 minutes, until the dates are soft and the flaxseed has thickened.
Blend until smooth and creamy.
Add sea salt flakes or Maldon salt.
Spread the caramel evenly over the nougat layer.
Refrigerate until stable.
To Make the Chocolate Layer
Melt the dark chocolate and coconut oil together over a water bath.
Stir until smooth and glossy.
Pour the melted chocolate over the caramel layer.
Spread it evenly.
Let the chocolate set in the refrigerator.
To Finish
Once set, remove the slab from the frame.
Use any remaining melted chocolate to drizzle over the bars if desired.
Finish with a little extra flaky salt.
Cut into 12 bars.
