Recipe Notes

Texture & Technical Notes:

  • The dough should be soft but stable after chilling.
  • Wet hands make shaping much easier and prevent cracks.
  • Do not overbake; the cookies should stay soft and slightly tender inside.
  • If using protein powder, the dough may become slightly drier. Add 10–15 g of plant-based milk if needed.

Storage:

  • Store the cookies in an airtight container in the refrigerator for up to 5–6 days. The texture becomes softer and more fudgy after chilling.
  • For longer storage, freeze the cookies for up to 1 month. Thaw overnight in the refrigerator or at room temperature before serving.
