Gather the necessary ingredients.
In a bowl, combine the oat milk, agave syrup, melted coconut oil, and apple sauce.
Add the psyllium husk and mix immediately.
Let the mixture sit for 3–5 minutes, until slightly thickened.
To Make the Dough
In a separate bowl, combine the oat flakes, oat flour, oat bran, chia seeds, baking powder, cinnamon, and salt.
Add the dry ingredients to the wet mixture.
Fold everything together with a spatula until a thick oat dough forms.
Let the dough rest for 5–10 minutes so the oats, chia, and psyllium absorb the moisture.
To Shape
Divide the dough into 8 equal portions.
Roll each portion into a ball with lightly wet hands.
Place on a lined baking tray and flatten gently into thick cookies.
Sprinkle extra oat flakes on top and press lightly so they stick.
To Bake
Bake at 180°C/360°F for around 15 minutes.
