Gather your required ingredients.
In a large bowl, combine oat flour, quinoa flour, almond flour, psyllium, inulin, coconut sugar, salt, and baking powder.
Add cold cubed butter.
Rub the butter into the dry ingredients using your fingertips until the mixture becomes sandy and grainy. It should resemble coarse crumbs.
Add cold milk and vanilla.
Mix quickly just until the dough comes together. Do not overwork.
Place the dough between two sheets of parchment paper and roll to approximately 4β5 mm thickness.
Cut circles using a cookie cutter.
Transfer to a lined baking tray.
Prick the surface with a fork to create the classic digestive pattern.
Bake at 170Β°C / 340Β°F for 15β18 minutes until lightly golden around the edges.
Cool completely before serving - they firm up as they cool.
