Gather the necessary ingredients.
In a saucepan, combine milk, egg yolks, and agave syrup.
Heat gently while stirring constantly.
Cook until the mixture reaches approx. 70°C / 160°F.
Do not boil — keep it smooth and slightly thickened.
To Cool:
Remove from heat and cool completely to room temperature.
To Finish the Base:
Add yogurt and protein powder to the cooled mixture.
Blend or whisk until fully smooth and homogeneous.
4. To Churn:
Transfer the mixture into an ice cream machine.
Churn for 20–30 minutes until creamy.
To Add Inclusions:
In the last 2–3 minutes of churning, add chopped chocolate and fresh mint.
To Freeze:
Transfer to a container and freeze for 2–3 hours until scoopable.
Scoop it up, top with fresh mint, and enjoy every creamy, refreshing bite.
