Gather your required ingredients.
In a large mixing bowl, combine the eggs, yogurt, milk, and honey.
Mix well until smooth.
Add the Dry Ingredients
Add psyllium, flaxseed, oat flour, brown rice flour, tapioca, baking powder, salt, and protein powder (if using) to the wet mixture.
Mix until fully combined. The dough will thicken quickly as the psyllium absorbs moisture.
Fermentation
Transfer the dough into a parchment-lined loaf pan. Cover loosely and let rise in a warm spot for 1.5–2 hours until slightly puffed, or overnight in the fridge.
Bake
Preheat the oven to 180°C (350°F).
