Gather your required ingredients.
Slice the zucchini into long, thin ribbons using a vegetable peeler or mandoline.
Place the zucchini ribbons on a tray or board.
Sprinkle lightly with sea salt and let them sit for 10–15 minutes.
This helps draw out excess moisture and makes the zucchini easier to roll.
Pat the zucchini ribbons dry with paper towel before assembling.
To Make the Ricotta Filling
In a bowl, combine the ricotta, rice flour, chopped capers, chopped parsley, salt, and black pepper.
Mix until smooth, creamy, and evenly combined.
The filling should be thick enough to spread on the zucchini without running.
Taste and adjust the seasoning if needed, keeping in mind that capers and Parmigiano are already salty.
To Assemble the Rolls
Spread a thin layer of ricotta filling over each zucchini ribbon.
Roll each ribbon into a small spiral roll.
Repeat with the remaining zucchini and filling.
Lightly drizzle olive oil over the bottom of a round skillet or baking dish.
Spread the tomato sauce evenly over the bottom of the dish. (a prepared tomato pasta sauce can also be used).
Arrange the zucchini rolls inside the dish, placing them close to each other with the cut side facing up.
To Finish Before Baking
Sprinkle the chopped walnuts over the zucchini rolls.
Add the grated Parmigiano on top.
To Bake
Bake at 175°C/350°F for 30–35 minutes.
The zucchini should be tender, the filling should be set, and the top should be lightly golden.
If the top browns too quickly, cover loosely with baking paper for the last part of baking.
Let the dish rest for 5–10 minutes before serving.
To Serve
Finish with fresh chopped parsley.
Serve warm directly from the skillet or baking dish.
