Use the fermented fruit as you would fresh fruit, or to bring incredible flavors to other dishes and recipes. The juice can also be enjoyed in dressings, marinades, or even as a brine for selected meats or fish…

  1. Sanitize jars with boiling water.
  2. Wash the nectarines, carefully remove the pit and cut them into chunks.
  3. Drizzle 1 Tablespoon of honey over the fruit, and sprinkle with salt. Toss everything together until the nectarines are evenly coated in the honey and salt.

  4. Transfer to a glass jar along with the ginger, then place a glass or ceramic fermentation weight on top of it. If you don't have a fermentation weight, simply use a sealed ziplock bag filled with water. Cover the jar and leave it out at room temperature for 4-5 days.

  5. Once done, store in the fridge to slow the fermentation, and enjoy when desired.
