Instructions

Sanitize jars with boiling water.

Wash the nectarines, carefully remove the pit and cut them into chunks.

Drizzle 1 Tablespoon of honey over the fruit, and sprinkle with salt. Toss everything together until the nectarines are evenly coated in the honey and salt.

Transfer to a glass jar along with the ginger, then place a glass or ceramic fermentation weight on top of it. If you don't have a fermentation weight, simply use a sealed ziplock bag filled with water. Cover the jar and leave it out at room temperature for 4-5 days.

Once done, store in the fridge to slow the fermentation, and enjoy when desired.
