Whenever someone asks me about fermentation projects to try at home for beginners, I encourage them to try a simple lacto-ferment! 

This recipe would be perfect for anyone looking to start fermenting vegetables at home, and only requires a clear jar, some vegetables, and a simple salt water brine.

To make this quick and easy fermentation at home, simply add cut celery stalks and carrot sticks to a clean mason jar, and mix with enough salt water to cover. Burp the contents every day for about five days, and then transfer to the fridge—it couldn’t be easier!

  1. Add the carrot and celery sticks to a clean, one-quart mason jar.

  1. In a separate container, mix the water and Kosher salt and stir until the salt dissolves completely.

  1. Add the whole peppercorns to the jar with the carrot and celery sticks.

  1. Pour the salt water brine over the vegetables to cover completely.

  1. Add a glass or ceramic fermentation weight to keep the carrot and celery sticks submerged beneath the surface of the salt water brine.

  1. Open the jar each day to allow any built-up gas to escape.

  1. Store at room temperature for roughly five days, and then transfer the contents to the fridge and enjoy.
